Instructions

  • Preheat the oven to 375 degrees F.
  • Using a sharp knife, carefully slice a pocket into the side of each chicken breast, being careful not to cut all the way through.
  • Season the inside of each chicken breast with salt and pepper.
  • Stuff each chicken breast with 2-3 slices of brie cheese and 2 tablespoons of cranberry sauce, pressing the edges together to seal the pocket.
  • In a small bowl, mix together the olive oil, dried thyme, and garlic powder.
  • Brush the seasoned oil mixture over the stuffed chicken breasts.
  • Place the chicken breasts on a baking sheet and bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
  • Remove from the oven and let the chicken rest for 5 minutes before serving.
