  • Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat. Pour in the egg mixture and cook, stirring occasionally, until the eggs are set. Remove from heat and set aside.
  • Place 2 medium flour tortillas on a clean work surface. Divide the cooked eggs, sliced avocado, and shredded cheddar cheese evenly between the two tortillas. Top each with another tortilla to form a quesadilla.
  • Heat a large non-stick skillet over medium heat. Carefully transfer one quesadilla to the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the second quesadilla.
