Instructions

  • In a bowl, beat the 4 large eggs and season with salt and pepper to taste.
  • Heat 1/2 tablespoon of olive oil in a non-stick skillet over medium heat.
  • Add the beaten eggs to the skillet and cook, stirring occasionally, until they are scrambled and fully cooked. Remove from the skillet and set aside.
  • In the same skillet, heat the remaining 1/2 tablespoon of olive oil over medium heat.
  • Place 1 large flour tortilla in the skillet and sprinkle half of the shredded cheddar cheese evenly over the tortilla.
  • Spread half of the scrambled eggs over the cheese, then sprinkle half of the diced bell peppers and onions on top.
  • Place the second tortilla on top and press down gently with a spatula.
  • Cook for 2-3 minutes, or until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla and cook for an additional 2-3 minutes on the other side.
  • Remove the quesadilla from the skillet and transfer to a cutting board. Allow it to cool for a minute before slicing into wedges.
  • Repeat the process with the remaining ingredients to make the second quesadilla.
  • Serve the breakfast quesadillas warm and enjoy!
