  • 1 package of thick rice vermicelli noodles
  • Garnishes: bean sprouts, lime wedges, cilantro, Thai basil, thinly sliced onion, thinly sliced green onion, thinly sliced banana blossom, thinly sliced cabbage, thinly sliced chili pepper

Instructions

  • In a large pot, dry roast the annatto seeds until fragrant. Remove from heat and add 1 cup of water. Let it sit for 10 minutes, then strain the liquid and discard the seeds.
  • In the same pot, add the beef shank, pork hock, onion, lemongrass, shallots, garlic, fish sauce, shrimp paste, sugar, chili powder, beef broth, and the annatto water. Bring to a boil, then reduce heat and simmer for 1.5 hours, skimming off any foam that rises to the surface.
  • Remove the beef shank and pork hock from the pot and let them cool. Once cooled, thinly slice the beef shank and shred the pork hock, discarding any bones or excess fat.
  • In a separate pot, cook the rice vermicelli noodles according to the package instructions. Drain and set aside.
  • To serve, divide the noodles among serving bowls. Top with the sliced beef shank and shredded pork hock. Ladle the hot broth over the noodles and meat. Serve with the garnishes on the side for each person to customize their bowl.
