- 2 cups all-purpose flour
- 1 cup granulated sugar

- 2 cups fresh or frozen blueberries
- 1/2 cup packed brown sugar
- 1/3 cup all-purpose flour
- 1/2 teaspoon ground cinnamon
- 1/4 cup unsalted butter, cold
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
- In a large bowl, combine 2 cups of flour, 1 cup of granulated sugar, baking powder, baking soda, and salt.
- Cut in 1/2 cup of softened butter until the mixture resembles coarse crumbs.
- In a separate bowl, beat the eggs, sour cream, and vanilla extract until well combined.
- Stir the wet ingredients into the flour mixture until just combined. Gently fold in the blueberries.
- In a small bowl, mix together the brown sugar, 1/3 cup of flour, and cinnamon. Cut in 1/4 cup of cold butter until the mixture resembles coarse crumbs.
- Spread half of the batter into the prepared pan. Sprinkle half of the streusel mixture over the batter. Repeat with the remaining batter and streusel mixture.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the coffee cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Enjoy!
