Instructions

  • Rinse the quinoa under cold water and drain well.
  • In a medium saucepan, bring 2 cups of water or chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and stir in the chopped parsley. Keep warm.
  • Meanwhile, season the salmon fillets with salt, pepper, and blackening seasoning, pressing the seasoning into the fish to coat evenly.
  • In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets and cook for 4-5 minutes on each side, or until the fish is blackened and cooked through.
