Ingredients
- 4 salmon fillets (6 oz each)
- 2 tbsp olive oil
- 2 tbsp blackening seasoning
- 1 cup quinoa
- 2 cups water or chicken broth
- 1/4 cup chopped fresh parsley
- 1 lemon, cut into wedges
- Salt and pepper to taste
Instructions
- Rinse the quinoa under cold water and drain well.
- In a medium saucepan, bring 2 cups of water or chicken broth to a boil. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed. Fluff with a fork and stir in the chopped parsley. Keep warm.
- Meanwhile, season the salmon fillets with salt, pepper, and blackening seasoning, pressing the seasoning into the fish to coat evenly.
- In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets and cook for 4-5 minutes on each side, or until the fish is blackened and cooked through.
- Serve the blackened salmon over the quinoa, garnish with lemon wedges, and enjoy!
