Ingredients
- 4 salmon fillets (6 oz each)
- 2 tbsp blackening seasoning
- 1 cup quinoa
- 2 cups chicken or vegetable broth
- 1/4 cup orange juice
- 2 tbsp honey
- 1 tsp grated orange zest
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat the oven to 400°F.
- Season the salmon fillets with 2 tbsp of blackening seasoning, making sure to coat both sides evenly.
- In a medium saucepan, bring 2 cups of chicken or vegetable broth to a boil. Add 1 cup of quinoa, reduce heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.
- While the quinoa is cooking, make the citrus glaze by combining 1/4 cup orange juice, 2 tbsp honey, and 1 tsp grated orange zest in a small saucepan. Bring to a simmer over medium heat and cook for 5 minutes, stirring occasionally, until the glaze thickens slightly. Remove from heat and set aside.
- Heat 2 tbsp of olive oil in a large oven-safe skillet over medium-high heat. Once the oil is hot, add the seasoned salmon fillets to the skillet and cook for 2-3 minutes on each side until the spices are blackened and the salmon is cooked through.
- Transfer the skillet to the preheated oven and bake for an additional 5-7 minutes, or until the salmon is flaky and cooked to your desired doneness.
- Fluff the cooked quinoa with a fork and stir in the chopped fresh parsley. Season with salt and pepper to taste.
