Black Bean Burgers

Ingredients
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup bread crumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 1 clove garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 egg
- 4 hamburger buns
- Optional toppings: lettuce, tomato, avocado, onion, cheese, ketchup, mustard
Instructions
- In a large bowl, mash the black beans with a fork or potato masher until mostly smooth.
- Add the bread crumbs, onion, bell pepper, garlic, cumin, chili powder, salt, black pepper, and egg to the bowl with the mashed black beans. Mix until well combined.
- Divide the mixture into 4 equal portions and shape each portion into a patty.
- Heat a non-stick skillet over medium heat and lightly coat with cooking spray or oil.
- Cook the black bean patties for 4-5 minutes on each side, or until they are heated through and have a crispy exterior.
- Toast the hamburger buns in the skillet for 1-2 minutes, if desired.
- Assemble the burgers with your choice of toppings and enjoy!
