Ingredients
- For the Black Bean Burger:
- 1 can (15 oz) black beans, drained and rinsed
- 1/2 cup bread crumbs
- 1/4 cup finely chopped onion
- 1/4 cup finely chopped bell pepper
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 4 whole wheat burger buns
- For the Sweet Potato Fries:
- 2 large sweet potatoes, peeled and cut into fries
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, mash the black beans with a fork until smooth.
- Add the bread crumbs, chopped onion, chopped bell pepper, cumin, chili powder, garlic powder, salt, and black pepper to the bowl with the mashed black beans. Mix until well combined.
- Divide the black bean mixture into 4 equal portions and shape each portion into a patty.
- Heat the olive oil in a skillet over medium heat. Cook the black bean patties for 4-5 minutes on each side, or until golden brown and heated through.
- While the black bean burgers are cooking, toss the sweet potato fries with olive oil, paprika, garlic powder, salt, and black pepper on a baking sheet until evenly coated.
- Spread the sweet potato fries in a single layer on the baking sheet and bake for 20-25 minutes, or until crispy and golden brown, flipping once halfway through.
- Toast the whole wheat burger buns in the oven for 2-3 minutes.
