- 2 cups cooked shredded chicken
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion and cook until softened, about 5 minutes.
- Stir in the minced garlic, ground cumin, dried oregano, and minced chipotle peppers. Cook for 1-2 minutes until fragrant.
