Instructions

  • Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a large bowl, whisk together 2 cups of all-purpose flour, 1 tablespoon of granulated sugar, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
  • Add the cold, cubed unsalted butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
  • Make a well in the center of the mixture and pour in 3/4 cup of milk. Stir until the dough comes together.
  • Turn the dough out onto a lightly floured surface and gently knead it a few times until it holds together.
  • Roll the dough out to about 1/2 inch thickness. Use a round cookie cutter or the rim of a glass to cut out biscuits. Place the biscuits on the prepared baking sheet.
  • Using your thumb or the back of a spoon, make an indentation in the center of each biscuit. Spoon about 1 teaspoon of your favorite jam or preserves into each indentation.
  • Bake for 10-12 minutes, or until the biscuits are golden brown and the jam is bubbly.
