Ingredients
- 1 cup water
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 eggs
- Vegetable oil for frying
- 1 cup fresh raspberries

- 1 tablespoon lemon juice
- Powdered sugar for dusting
Instructions
- In a medium saucepan, bring 1 cup of water, 1/2 cup of unsalted butter, and 1/4 teaspoon of salt to a boil.
- Reduce heat to low and add 1 cup of all-purpose flour. Stir constantly until the mixture forms a ball, about 1-2 minutes.
- Remove from heat and let cool for 5 minutes.
- Add 4 eggs, one at a time, stirring well after each addition until smooth.
- In a separate saucepan, combine 1 cup of fresh raspberries, 1/4 cup of granulated sugar, and 1 tablespoon of lemon juice. Cook over medium heat, stirring occasionally, until the raspberries break down and the sauce thickens, about 5-7 minutes. Remove from heat and strain the sauce to remove seeds. Set aside.
- In a large pot, heat vegetable oil to 375°F (190°C).
- Drop spoonfuls of the dough into the hot oil and fry until golden brown, about 3-4 minutes per side. Drain on paper towels.
- Dust the warm beignets with powdered sugar and serve with the raspberry sauce for dipping. Enjoy!
