Ingredients
- 1 cup of water
- 1/2 cup of unsalted butter
- 1/4 teaspoon of salt
- 1 cup of all-purpose flour
- 4 eggs
- 1/2 cup of granulated sugar
- 1/2 cup of heavy cream
- 8 ounces of semisweet chocolate, chopped
- 1 teaspoon of vanilla extract
Instructions
- In a medium saucepan, bring 1 cup of water, 1/2 cup of unsalted butter, and 1/4 teaspoon of salt to a boil over medium heat.
- Reduce the heat to low and add 1 cup of all-purpose flour. Stir constantly until the mixture forms a ball, about 1 minute.
- Remove the pan from the heat and let it cool for 5 minutes.
- Add 4 eggs, one at a time, beating well after each addition, until the batter is smooth.
- In a separate saucepan, heat 1/2 cup of heavy cream over medium heat until it simmers.
- Place 8 ounces of chopped semisweet chocolate in a heatproof bowl and pour the hot cream over the chocolate. Let it sit for 1 minute, then stir until smooth.
- Stir in 1/2 cup of granulated sugar and 1 teaspoon of vanilla extract into the chocolate mixture until well combined. Keep warm over low heat.
- In a large, heavy-bottomed pot, heat 2 inches of vegetable oil to 360°F (180°C).
- Drop the dough by spoonfuls into the hot oil and fry until golden brown, about 3-4 minutes per side.
- Remove the beignets from the oil and drain on paper towels.
- Serve the warm beignets with the chocolate sauce for dipping. Enjoy!
