Ingredients
- 1 lb of smoked sausage
- 1 onion, thinly sliced
- 2 cloves of garlic, minced
- 1 cup of beer
- 1 cup of chicken broth
- 1 tbsp of brown sugar
- 1 tsp of caraway seeds
- 1 lb of sauerkraut, drained and rinsed
- 2 lbs of potatoes, peeled and cubed
- 1/2 cup of milk
- 4 tbsp of butter
- Salt and pepper to taste
Instructions
- In a large skillet, brown 1 lb of smoked sausage over medium heat for 5 minutes. Remove from the skillet and set aside.
- In the same skillet, sauté 1 thinly sliced onion and 2 minced cloves of garlic until softened, about 5 minutes.
- Deglaze the skillet with 1 cup of beer, scraping up any browned bits from the bottom of the pan.
- Add 1 cup of chicken broth, 1 tbsp of brown sugar, and 1 tsp of caraway seeds to the skillet. Stir to combine.
- Return the browned sausage to the skillet and add 1 lb of drained and rinsed sauerkraut. Bring to a simmer, then cover and cook for 30 minutes, stirring occasionally.
- Meanwhile, in a separate pot, boil 2 lbs of peeled and cubed potatoes until tender, about 15-20 minutes. Drain and return to the pot.
- Mash the potatoes with 1/2 cup of milk and 4 tbsp of butter until smooth and creamy. Season with salt and pepper to taste.
- Serve the beer-braised sausage and sauerkraut over the mashed potatoes. Enjoy!
