Instructions

  • In a small bowl, mix 1/2 cup soy sauce, 1/4 cup mirin, 2 tbsp brown sugar, and 1 tbsp cornstarch. Set aside.
  • Heat 1 tbsp vegetable oil in a large skillet or wok over high heat.
  • Add the thinly sliced beef and stir-fry for 2-3 minutes until browned. Remove from the skillet and set aside.
  • In the same skillet, add the minced garlic and grated ginger. Stir-fry for 1 minute.
  • Add the sliced bell peppers, broccoli, and julienned carrot. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
  • Return the cooked beef to the skillet and pour the soy sauce mixture over the beef and vegetables. Stir-fry for an additional 2-3 minutes until the sauce thickens and coats the beef and vegetables.
