Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, diced
- 1/2 cup black beans, drained and rinsed
- 1/2 cup corn kernels, drained
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped cilantro
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- 2 chipotle peppers in adobo sauce
- 1 tablespoon adobo sauce
- 1 tablespoon lime juice
- 1 teaspoon honey
- 1/2 teaspoon cumin
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- In a large skillet, cook 1 lb of ground beef over medium heat until browned. Drain any excess fat.
- Add 1 packet of taco seasoning to the cooked beef and stir to combine. Cook for an additional 2-3 minutes. Remove from heat and set aside.
- In a blender or food processor, combine 1/4 cup sour cream, 1/4 cup mayonnaise, 2 chipotle peppers in adobo sauce, 1 tablespoon adobo sauce, 1 tablespoon lime juice, 1 teaspoon honey, 1/2 teaspoon cumin, and salt and pepper to taste. Blend until smooth to make the spicy chipotle dressing.
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, red onion, black beans, and corn kernels.
- Add the cooked beef to the bowl and toss to combine.
- Divide the salad among 4 plates and top with shredded cheddar cheese and chopped cilantro.
- Drizzle the spicy chipotle dressing over the salad and serve with tortilla chips on the side.
