  • 1/4 cup mayonnaise
  • 2 chipotle peppers in adobo sauce
  • 1 tablespoon adobo sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips for serving

  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream
  • 1/4 cup mayonnaise
  • 2 chipotle peppers in adobo sauce
  • 1 tablespoon adobo sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1/2 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  • In a large skillet, cook 1 lb of ground beef over medium heat until browned. Drain any excess fat.
  • Add 1 packet of taco seasoning to the cooked beef and stir to combine. Cook for an additional 2-3 minutes. Remove from heat and set aside.
  • In a blender or food processor, combine 1/4 cup sour cream, 1/4 cup mayonnaise, 2 chipotle peppers in adobo sauce, 1 tablespoon adobo sauce, 1 tablespoon lime juice, 1 teaspoon honey, 1/2 teaspoon cumin, and salt and pepper to taste. Blend until smooth to make the spicy chipotle dressing.
  • In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, red onion, black beans, and corn kernels.
  • Add the cooked beef to the bowl and toss to combine.
  • Divide the salad among 4 plates and top with shredded cheddar cheese and chopped cilantro.
