Spicy Beef Stew

Ingredients
- 2 pounds of beef stew meat, cut into 1-inch cubes
- 2 tablespoons of vegetable oil
- 1 large onion, chopped
- 3 cloves of garlic, minced
- 4 cups of beef broth
- 1 can of diced tomatoes
- 2 large carrots, peeled and sliced
- 2 large potatoes, peeled and cubed
- 1 teaspoon of paprika
- 1/2 teaspoon of cayenne pepper
- 1/2 teaspoon of red pepper flakes
- 1 teaspoon of cumin
- Salt and pepper to taste
- 2 tablespoons of all-purpose flour
- 2 tablespoons of water
Instructions
- In a large pot, heat the vegetable oil over medium-high heat.
- Add the beef stew meat and brown on all sides, about 5 minutes.
- Add the chopped onion and minced garlic to the pot and cook until softened, about 3 minutes.
- Stir in the beef broth, diced tomatoes, carrots, potatoes, paprika, cayenne pepper, red pepper flakes, cumin, salt, and pepper.
- Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 hours, stirring occasionally.
- In a small bowl, mix the flour and water to make a slurry. Stir the slurry into the stew to thicken the broth.
- Simmer for an additional 10 minutes, then taste and adjust seasoning if necessary.
- Serve the spicy beef stew hot and enjoy!
