Beef Rendang

Ingredients
- 2 lbs beef chuck, cut into cubes
- 5 shallots, chopped
- 5 cloves garlic, minced
- 1 inch ginger, grated
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 1 cinnamon stick
- 3 star anise
- 5 cardamom pods
- 1 can (14 oz) coconut milk
- 1 cup water
- 2 tbsp tamarind paste
- 3 tbsp palm sugar
- Salt to taste
- 3 tbsp vegetable oil
Instructions
- In a large pot, heat 3 tbsp of vegetable oil over medium heat.
- Add the chopped shallots, minced garlic, and grated ginger. Cook until fragrant, about 3-4 minutes.
- Add the beef cubes and cook until browned on all sides.
- Stir in the lemongrass, kaffir lime leaves, cinnamon stick, star anise, and cardamom pods.
- Pour in the coconut milk and water. Bring to a simmer.
- Stir in the tamarind paste and palm sugar. Season with salt to taste.
- Reduce the heat to low and let the beef simmer for 2-3 hours, stirring occasionally, until the sauce thickens and the beef is tender.
- Serve the beef rendang with steamed rice or coconut rice. Enjoy!
