  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of chili powder
  • 1/2 teaspoon of cumin
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 8 large flour tortillas
  • 2 cups of shredded cheddar cheese
  • 1 cup of shredded Monterey Jack cheese
  • 1/2 cup of chopped fresh cilantro
  • Sour cream, salsa, and guacamole for serving

  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper

  • 2 cups of shredded cheddar cheese
  • 1 cup of shredded Monterey Jack cheese
  • 1/2 cup of chopped fresh cilantro
  • Sour cream, salsa, and guacamole for serving

Instructions

  • In a large skillet, heat the vegetable oil over medium heat. Add the diced onion and cook until softened, about 3 minutes.
  • Add the ground beef to the skillet and cook until browned, breaking it up with a spoon as it cooks. Drain any excess fat from the skillet.
  • Stir in the minced garlic, chili powder, cumin, paprika, salt, and black pepper. Cook for an additional 2 minutes, then remove from heat.
  • Place a large non-stick skillet over medium heat. Place one tortilla in the skillet and sprinkle 1/4 cup of cheddar cheese and 1/4 cup of Monterey Jack cheese over half of the tortilla.
  • Spoon a quarter of the beef mixture over the cheese, then sprinkle with 2 tablespoons of chopped cilantro. Fold the tortilla in half to cover the filling.
  • Cook for 2-3 minutes on each side, until the tortilla is golden brown and the cheese is melted. Repeat with the remaining tortillas and filling.
  • Cut the quesadillas into wedges and serve with sour cream, salsa, and guacamole.
