Beef Kebab with Grilled Vegetables

Ingredients
- 1 lb beef sirloin, cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- 8 cherry tomatoes
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 metal or soaked wooden skewers
Instructions
- In a bowl, mix together 1/4 cup olive oil, 2 tablespoons lemon juice, 2 cloves minced garlic, 1 teaspoon paprika, 1 teaspoon cumin, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
- Add the beef cubes to the marinade and toss to coat. Cover and refrigerate for at least 1 hour.
- Preheat grill to medium-high heat.
- Thread marinated beef, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes onto skewers, alternating the ingredients.
- Grill the kebabs for 10-12 minutes, turning occasionally, until the beef is cooked to desired doneness and the vegetables are charred and tender.
- Remove from the grill and let rest for a few minutes before serving.
- Serve the beef kebabs with the grilled vegetables and enjoy!
