  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 cups cooked brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1/2 cup salsa
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  • In a small bowl, mix together chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper.
  • In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the sliced flank steak and half of the spice mixture. Cook for 3-4 minutes until browned. Remove from the skillet and set aside.
  • In the same skillet, heat the remaining 1 tbsp of olive oil. Add the sliced bell peppers, onions, and the remaining spice mixture. Cook for 5-6 minutes until the vegetables are tender and slightly charred.
  • In a separate saucepan, heat the black beans and corn over medium heat until warmed through.
  • To assemble the bowls, divide the cooked brown rice among 4 serving bowls. Top with the cooked beef, sautéed vegetables, black beans, and corn. Drizzle with salsa and sprinkle with shredded cheddar cheese and chopped cilantro.
  • Serve the beef fajita bowls with lime wedges on the side for squeezing over the top.
