Beef Fajita Bowl

Ingredients
- 1 lb flank steak, sliced into thin strips
- 2 bell peppers, sliced
- 1 onion, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 cups cooked brown rice
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1/2 cup salsa
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- In a small bowl, mix together chili powder, cumin, garlic powder, onion powder, paprika, salt, and black pepper.
- In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Add the sliced flank steak and half of the spice mixture. Cook for 3-4 minutes until browned. Remove from the skillet and set aside.
- In the same skillet, heat the remaining 1 tbsp of olive oil. Add the sliced bell peppers, onions, and the remaining spice mixture. Cook for 5-6 minutes until the vegetables are tender and slightly charred.
- In a separate saucepan, heat the black beans and corn over medium heat until warmed through.
- To assemble the bowls, divide the cooked brown rice among 4 serving bowls. Top with the cooked beef, sautéed vegetables, black beans, and corn. Drizzle with salsa and sprinkle with shredded cheddar cheese and chopped cilantro.
- Serve the beef fajita bowls with lime wedges on the side for squeezing over the top.
