Ingredients
- 1 pound of ground beef
- 4 medium potatoes, diced
- 1 onion, chopped
- 1 bell pepper, diced
- 2 cloves of garlic, minced
- 1 teaspoon of paprika
- 1/2 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 cup of beef broth
- 1 tablespoon of olive oil
- 2 tablespoons of chopped fresh parsley
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add 1 chopped onion and 1 diced bell pepper to the skillet and cook until softened, about 5 minutes.
- Add 2 cloves of minced garlic and cook for an additional 1 minute.
- Push the vegetables to the side of the skillet and add 1 pound of ground beef to the center. Cook until browned, breaking it up with a spoon as it cooks.
- Stir in 1 teaspoon of paprika, 1/2 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
- Add 4 diced potatoes to the skillet and pour in 1 cup of beef broth. Bring to a simmer, then cover and cook for 15-20 minutes, or until the potatoes are tender.
- Sprinkle with 2 tablespoons of chopped fresh parsley before serving.
