Instructions

  • In a large skillet, cook 1 lb of ground beef over medium heat until no longer pink. Drain any excess fat.
  • Add 1 teaspoon of chili powder, 1/2 teaspoon of cumin, 1/2 teaspoon of garlic powder, 1/2 teaspoon of onion powder, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper to the cooked beef. Stir to combine and cook for an additional 2-3 minutes. Remove from heat.
  • Place 4 flour tortillas on a flat surface. Divide the cooked beef evenly among the tortillas, spreading it out to cover the entire surface.
  • Sprinkle 2 cups of shredded cheddar cheese over the beef on each tortilla. Top with 1/2 cup of diced tomatoes and 1/4 cup of chopped fresh cilantro.
  • Place the remaining 4 flour tortillas on top of the beef and cheese mixture to form quesadillas.
  • Heat a large skillet over medium heat. Place one quesadilla in the skillet and cook for 2-3 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat with the remaining quesadillas.
  • Cut the quesadillas into wedges and serve with 1/4 cup of sour cream and 1/4 cup of salsa for dipping. Enjoy!
