Instructions

  • In a large pot, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the beef stew meat and brown on all sides, about 5 minutes.

  • Pour in the beef broth and bring to a boil.
  • Reduce the heat to low, cover, and simmer for 1 hour.
  • Add the chopped cabbage, sliced carrots, diced potatoes, bay leaves, and dried thyme to the pot.
  • Season with salt and pepper to taste.
  • Cover and simmer for an additional 45 minutes, or until the vegetables are tender and the beef is cooked through.
  • Discard the bay leaves before serving.
