Ingredients
- 1.5 lbs beef stew meat, cubed
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 head of cabbage, chopped
- 4 carrots, sliced
- 3 potatoes, diced
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat 2 tablespoons of olive oil over medium-high heat.
- Add the beef stew meat and brown on all sides, about 5 minutes.
- Add the chopped onion and minced garlic, and cook until softened, about 3 minutes.
- Pour in the beef broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 1 hour.
- Add the chopped cabbage, sliced carrots, diced potatoes, bay leaves, and dried thyme to the pot.
- Season with salt and pepper to taste.
- Cover and simmer for an additional 45 minutes, or until the vegetables are tender and the beef is cooked through.
- Discard the bay leaves before serving.
