Instructions

  • In a large skillet, cook 1 pound of ground beef and 1 chopped onion over medium heat until the beef is no longer pink. Drain any excess fat.
  • Stir in 1 can of refried beans, 1 cup of shredded cheddar cheese, 1/2 cup of spicy salsa, 1 teaspoon of chili powder, 1/2 teaspoon of cumin, and 1/4 teaspoon of cayenne pepper. Cook and stir until the mixture is heated through and the cheese is melted.
  • Spoon about 1/4 of the beef and bean mixture down the center of each tortilla. Sprinkle with chopped fresh cilantro.
  • Fold the bottom of each tortilla over the filling, then fold in the sides, and roll up tightly.
  • In a large skillet over medium heat, place the burritos seam side down and cook until golden brown, about 2-3 minutes per side.
  • Serve the burritos with a dollop of sour cream and extra salsa on the side, if desired. Enjoy!
