- 1 lb beef stew meat, cubed
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 1 cup pearl barley
- 8 cups beef broth
- 2 bay leaves
- 1/4 cup fresh parsley, chopped
- 2 tbsp fresh thyme, chopped
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat 2 tbsp of olive oil over medium-high heat.
- Add the cubed beef stew meat and brown on all sides, about 5 minutes.
- Add the chopped onion, diced carrots, diced celery, and minced garlic to the pot. Cook for 5 minutes, stirring occasionally.
- Pour in the beef broth and add the pearl barley and bay leaves. Bring to a boil, then reduce heat to low and simmer for 1 hour, or until the beef is tender and the barley is cooked through.
- Stir in the chopped fresh parsley and thyme. Season with salt and pepper to taste.
- Remove the bay leaves and discard.
- Serve hot and enjoy!
