BBQ Pulled Tofu Sandwich

Ingredients
- 1 block of extra firm tofu, pressed and drained
- 1 cup of BBQ sauce
- 1 tablespoon of olive oil
- 1 teaspoon of smoked paprika
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/4 teaspoon of cayenne pepper
- Salt and pepper to taste
- 4 hamburger buns
- 1 cup of coleslaw (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the pressed tofu into 1/2 inch thick slices.
- In a small bowl, mix together the BBQ sauce, olive oil, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and pepper.
- Place the tofu slices on a baking sheet lined with parchment paper and brush both sides with the BBQ sauce mixture.
- Bake for 25-30 minutes, flipping the tofu halfway through, until the edges are crispy and the sauce has caramelized.
- Remove the tofu from the oven and use two forks to shred it into small pieces.
- Toss the shredded tofu in any remaining BBQ sauce mixture.
- Toast the hamburger buns in a toaster or on a skillet until lightly browned.
- Assemble the sandwiches by placing a generous amount of the BBQ pulled tofu on the bottom half of each bun, and topping with coleslaw if desired.
- Serve immediately and enjoy!
