BBQ Pulled Mushroom Sandwich

Ingredients
- 1 lb of mushrooms, sliced
- 1 onion, thinly sliced
- 3 cloves of garlic, minced
- 1 cup of BBQ sauce
- 1 tbsp of olive oil
- 1 tsp of smoked paprika
- 1/2 tsp of cumin
- Salt and pepper to taste
- 4 hamburger buns
Instructions
- In a large skillet, heat 1 tbsp of olive oil over medium heat.
- Add the sliced mushrooms, onion, and minced garlic to the skillet. Cook for 8-10 minutes, or until the mushrooms are tender and the onions are caramelized.
- Stir in 1 cup of BBQ sauce, 1 tsp of smoked paprika, 1/2 tsp of cumin, and salt and pepper to taste. Cook for an additional 5 minutes, stirring occasionally.
- Using two forks, shred the mushrooms in the skillet to resemble pulled pork.
- Toast the hamburger buns in a toaster or on a skillet until lightly golden.
- Divide the BBQ pulled mushroom mixture evenly among the 4 toasted buns.
- Serve the sandwiches immediately and enjoy!
