  • In a large skillet, heat 1 tbsp of olive oil over medium heat.
  • Add the sliced mushrooms, onion, and minced garlic to the skillet. Cook for 8-10 minutes, or until the mushrooms are tender and the onions are caramelized.
  • Stir in 1 cup of BBQ sauce, 1 tsp of smoked paprika, 1/2 tsp of cumin, and salt and pepper to taste. Cook for an additional 5 minutes, stirring occasionally.
  • Using two forks, shred the mushrooms in the skillet to resemble pulled pork.
  • Toast the hamburger buns in a toaster or on a skillet until lightly golden.
  • Divide the BBQ pulled mushroom mixture evenly among the 4 toasted buns.
  • Serve the sandwiches immediately and enjoy!
