BBQ Pulled Jackfruit Grilled Cheese

Ingredients
- 2 cans of young green jackfruit in brine, drained and shredded
- 1 cup of BBQ sauce
- 8 slices of bread
- 1 cup of vegan cheddar cheese, shredded
- 1/4 cup of vegan butter
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of onion powder
- 1/4 teaspoon of smoked paprika
- Salt and pepper to taste
Instructions
- In a large bowl, mix the shredded jackfruit with the BBQ sauce until well combined.
- Heat a skillet over medium heat and add the jackfruit mixture. Cook for 8-10 minutes, stirring occasionally, until the jackfruit is heated through and slightly caramelized. Remove from heat and set aside.
- Spread vegan butter on one side of each slice of bread. Place 4 slices, buttered side down, on a clean surface.
- Divide the vegan cheddar cheese evenly among the 4 slices of bread. Top with the BBQ pulled jackfruit mixture, then place the remaining 4 slices of bread on top, buttered side up.
- Heat a large skillet over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
- Remove from the skillet and let cool for a few minutes before slicing. Serve and enjoy!
