Ingredients
- 2 boneless, skinless chicken breasts
- 1/2 cup BBQ sauce
- 1 head of romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup corn kernels
- 1/2 cup black beans, drained and rinsed
- 1/4 cup shredded cheddar cheese
- 1/4 cup ranch dressing
- 1/4 cup crispy tortilla strips
Instructions
- Preheat grill to medium-high heat.
- Season the chicken breasts with salt and pepper, then grill for 6-7 minutes on each side, or until fully cooked. Brush with 1/4 cup of BBQ sauce during the last few minutes of grilling. Remove from grill and let rest for 5 minutes before slicing.
- In a large bowl, combine the chopped romaine lettuce, cherry tomatoes, red onion, corn, and black beans.
- Add the sliced BBQ chicken on top of the salad mixture.
- Drizzle the ranch dressing and remaining 1/4 cup of BBQ sauce over the salad.
- Sprinkle with shredded cheddar cheese and crispy tortilla strips.
- Toss the salad gently to combine all the ingredients.
