Instructions

  • In a bowl, mix 2 cups of cooked and shredded chicken with 1/2 cup of BBQ sauce until the chicken is well coated.
  • Place a large flour tortilla on a flat surface and sprinkle 1/2 cup of shredded cheddar cheese evenly over one half of the tortilla.
  • Spread 1/4 of the BBQ chicken mixture over the cheese, then sprinkle 2 tablespoons of diced red onion and 1 tablespoon of chopped fresh cilantro on top.
  • Fold the tortilla in half to cover the filling, creating a half-moon shape.
  • Repeat with the remaining tortillas and filling ingredients.
  • Heat a large skillet over medium heat and place one or two quesadillas in the skillet, cooking for 2-3 minutes on each side until the tortilla is golden brown and the cheese is melted.
  • Remove the quesadillas from the skillet and let them cool for a minute before slicing each into 3 wedges.
  • Serve with a dollop of sour cream and a side of salsa, if desired.
