  • 2 tbsp adobo sauce
  • 4 tbsp butter
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup panko breadcrumbs
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Cook the elbow macaroni according to package instructions. Drain and set aside.
  • In a small bowl, mix the shredded chicken with BBQ sauce until well coated. Set aside.
  • In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to make a roux.
  • Gradually whisk in the milk and bring to a simmer, stirring constantly until the sauce thickens.
  • Stir in the minced chipotle peppers, adobo sauce, and shredded cheddar cheese until the cheese is melted and the sauce is smooth. Season with salt and pepper to taste.
  • Add the cooked macaroni to the cheese sauce and stir to combine. Gently fold in the BBQ chicken.
