Instructions

  • Preheat grill to medium-high heat.
  • Season chicken breasts with salt and pepper, then grill for 6-7 minutes per side, or until fully cooked. Brush with BBQ sauce during the last few minutes of grilling. Remove from grill and let rest for 5 minutes before slicing thinly.
  • Spread butter on one side of each slice of bread. Place 2 slices, butter side down, on a clean work surface.
  • Top each slice with 2 slices of cheddar cheese, then divide the sliced BBQ chicken, red onion, and cilantro evenly between the two sandwiches. Top with the remaining slices of bread, butter side up.
  • Heat a large skillet over medium heat. Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
  • Remove from the skillet and let cool for a minute before slicing in half. Serve and enjoy!
