Bavarian Pretzel with Spicy Mustard Dip

Created by: Howcan Team

Ingredients

  • 1 1/2 cups warm water
  • 1 tablespoon granulated sugar
  • 2 teaspoons kosher salt
  • 1 package active dry yeast
  • 4 1/2 cups all-purpose flour
  • 4 cups water
  • 1/4 cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water
  • Coarse sea salt, for sprinkling
  • 1/2 cup spicy mustard

Instructions

  • In a mixing bowl, combine 1 1/2 cups warm water, 1 tablespoon sugar, and 2 teaspoons kosher salt. Sprinkle 1 package of active dry yeast on top. Allow it to sit for 5 minutes, or until the mixture begins to foam.
  • Add 4 1/2 cups of flour and mix until the dough comes together. Turn the dough out onto a floured surface and knead for about 5 minutes, until smooth and elastic.
  • Place the dough in a greased bowl, cover with a clean towel, and let it rise in a warm place for 1 hour, or until doubled in size.
  • Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper and set aside.
  • In a large pot, bring 4 cups of water to a boil. Add 1/4 cup of baking soda and reduce the heat to a simmer.
  • Divide the dough into 8 equal pieces. Roll each piece into a long rope and shape into a pretzel. Dip each pretzel into the simmering water for 30 seconds, then place them onto the prepared baking sheet.
  • Brush each pretzel with the beaten egg yolk and water mixture, then sprinkle with coarse sea salt.
  • Bake the pretzels for 12-14 minutes, or until golden brown.
  • While the pretzels are baking, prepare the spicy mustard dip by mixing 1/2 cup of spicy mustard with 1 tablespoon of water in a small bowl.
  • Serve the warm pretzels with the spicy mustard dip and enjoy!

The history of the Bavarian pretzel dates back to the 12th century in Germany, where it was created by monks. The pretzel's distinctive knot shape was meant to resemble arms crossed in prayer. Over time, it became a popular snack throughout Bavaria and beyond. The addition of a spicy mustard dip adds a kick of flavor to this beloved treat. Today, the best Bavarian pretzels with spicy mustard dip can be found in traditional beer gardens and bakeries throughout Bavaria, where skilled chefs carefully craft each pretzel by hand. The key to a perfect pretzel lies in achieving the ideal balance of a crispy exterior and soft, chewy interior, paired with a zesty and tangy mustard dip.
