Instructions

  • In a large bowl, combine 2 ripe bananas, mashed, 1 1/2 cups of oats, 1/2 cup of chopped walnuts, 1 teaspoon of baking powder, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of salt.
  • In a separate bowl, whisk together 2 eggs, 1/2 cup of milk, 2 tablespoons of maple syrup, and 1 teaspoon of vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil.
  • Pour 1/4 cup of the pancake batter onto the skillet for each pancake.
  • Cook for 2-3 minutes, or until bubbles form on the surface of the pancake.
  • Flip the pancake and cook for an additional 2-3 minutes, or until golden brown.
