Instructions

  • Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together 2 cups of flour, 1 teaspoon of baking soda, and 1/4 teaspoon of salt.
  • In a separate bowl, mix 1/2 cup of melted butter and 3/4 cup of brown sugar until well combined. Add 2 eggs, mashed bananas, and 1 teaspoon of vanilla extract, and mix until smooth.
  • Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Fold in 1/2 cup of chopped walnuts.
  • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  • Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
