Instructions
- In a large bowl, combine 2 mashed ripe bananas, 1 cup all-purpose flour, 2 tablespoons sugar, 1 teaspoon baking powder, 1/4 teaspoon salt, and 1/2 teaspoon ground cinnamon.
- Add 1/2 cup milk and 1 teaspoon vanilla extract to the dry ingredients and mix until just combined. Do not overmix.
- In a deep skillet or pot, heat 2 inches of vegetable oil over medium heat until it reaches 350°F (180°C).
- Drop spoonfuls of the banana batter into the hot oil and fry until golden brown, about 2-3 minutes per side.
- Remove the fritters from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
- Dust the banana fritters with powdered sugar if desired, and serve warm. Enjoy!
