Ingredients
- 4 salmon fillets (6 oz each)
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 pound mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 1 tablespoon balsamic glaze (for drizzling, optional)
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together 1/4 cup balsamic vinegar, 2 tablespoons honey, minced garlic, dried oregano, salt, and black pepper.
- Place the salmon fillets in a shallow dish and pour the balsamic mixture over them. Let marinate for 10 minutes.
- While the salmon is marinating, prepare the vegetables. Cut the mixed vegetables into bite-sized pieces and place them on a baking sheet. Drizzle with 2 tablespoons of olive oil, and season with salt and pepper to taste. Toss to coat evenly.

- To serve, divide the roasted vegetables among plates and top with a balsamic glazed salmon fillet. Garnish with fresh parsley and enjoy!
