Instructions

  • Rinse the chicken and pat dry with paper towels. Place the chicken in a roasting pan.
  • In a small bowl, whisk together 1/4 cup of honey, 2 tablespoons of olive oil, 2 tablespoons of soy sauce, 2 cloves of minced garlic, 1 teaspoon of dried thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper.
  • Brush the honey glaze all over the chicken, making sure to coat it evenly.
  • Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) when measured in the thickest part of the thigh.
  • Baste the chicken with the pan juices and honey glaze every 20 minutes during cooking.
