  • Using a sharp knife, cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
  • Season the inside of each chicken breast with salt and pepper.
  • Stuff each chicken breast with the sliced mozzarella and cherry tomatoes, then secure with toothpicks.
  • Heat the olive oil in a large oven-safe skillet over medium-high heat.
  • Sear the stuffed chicken breasts for 2-3 minutes on each side, until golden brown.
  • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through.
  • Drizzle the balsamic glaze over the stuffed chicken breasts and return to the oven for an additional 2-3 minutes to warm the glaze.
  • Remove the skillet from the oven and sprinkle the chopped fresh basil over the chicken breasts.
  • Allow the chicken to rest for a few minutes before serving to allow the juices to redistribute.
