- 4 salmon fillets (6 oz each)
- 1/4 cup unsalted butter, softened
- 2 tablespoons fresh dill, chopped
- 1 lemon, juiced and zested
- Salt and pepper to taste
- 1 pound mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the softened butter, chopped dill, lemon juice, and lemon zest. Season with salt and pepper to taste.
