Instructions

  • Preheat the oven to 375°F (190°C).

  • Place the tilapia fillets in a baking dish and pour the lemon garlic mixture over them, making sure to coat each fillet evenly. Set aside to marinate for 10 minutes.
  • In a medium saucepan, bring 4 cups of water to a boil. Add 2 cups of brown rice, reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the water is absorbed.
  • While the rice is cooking, place the baking dish with the marinated tilapia in the preheated oven and bake for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  • In a separate pot, bring water to a boil and add the broccoli florets. Steam for 5-7 minutes, or until the broccoli is tender but still crisp. Drain and toss with 2 tablespoons of butter, and season with salt and pepper to taste.
