Ingredients
- 4 tilapia fillets
- 2 lemons, juiced and zested
- 4 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 pound of mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 2 tablespoons of balsamic vinegar
- 1 tablespoon of honey
- 2 tablespoons of fresh parsley, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, whisk together the lemon juice, lemon zest, minced garlic, olive oil, dried oregano, salt, and black pepper.
- Place the tilapia fillets in a baking dish and pour the lemon garlic marinade over them. Let them marinate for 10 minutes.
