Instructions

  • Preheat the oven to 400°F (200°C).
  • Place the halibut fillets on a parchment-lined baking sheet and drizzle with 2 tablespoons of olive oil.
  • In a small bowl, mix together 1/2 cup panko breadcrumbs, 2 tablespoons grated Parmesan cheese, 1 tablespoon lemon zest, 1 teaspoon black pepper, 1/2 teaspoon salt, and 2 tablespoons chopped fresh parsley.
  • Press the breadcrumb mixture onto the top of each halibut fillet to form a crust.
