Ingredients
- 4 halibut fillets (6 ounces each)
- 1/4 cup olive oil
- 1/2 cup panko breadcrumbs
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon zest
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoons chopped fresh parsley
- 1 lemon, sliced for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Place the halibut fillets on a parchment-lined baking sheet and drizzle with 2 tablespoons of olive oil.
- In a small bowl, mix together 1/2 cup panko breadcrumbs, 2 tablespoons grated Parmesan cheese, 1 tablespoon lemon zest, 1 teaspoon black pepper, 1/2 teaspoon salt, and 2 tablespoons chopped fresh parsley.
- Press the breadcrumb mixture onto the top of each halibut fillet to form a crust.
- Drizzle the remaining 2 tablespoons of olive oil over the breadcrumb crust.
- Place a slice of lemon on top of each fillet for garnish.
- Bake in the preheated oven for 15-20 minutes, or until the halibut is cooked through and the crust is golden brown.
