Instructions

  • Place the cod fillets in a baking dish and pour the lemon-olive oil mixture over them, making sure to coat each fillet evenly.
  • Bake the cod in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
  • While the cod is baking, prepare the brown rice according to package instructions, using 2 cups of water.
