  • 1 tbsp balsamic vinegar
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp red pepper flakes
  • 2 tbsp chopped fresh basil
  • 1 tbsp lemon juice
  • 2 tbsp grated Parmesan cheese

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a bowl, combine 1/2 cup breadcrumbs, 2 tbsp chopped parsley, 1 tbsp chopped dill, 1 tbsp chopped chives, 2 cloves minced garlic, 1/4 cup grated Parmesan cheese, and salt and pepper to taste.
  • Brush the cod fillets with 2 tbsp of olive oil, then press the herbed breadcrumb mixture onto the top of each fillet.
  • Place the cod fillets on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the fish is cooked through and the crust is golden brown.
  • While the cod is baking, prepare the roasted vegetables. Toss 1 lb of mixed vegetables with 1 tbsp balsamic vinegar, 1 tsp Italian seasoning, 1/2 tsp garlic powder, 1/4 tsp red pepper flakes, and salt and pepper to taste.
  • Spread the vegetables on a separate baking sheet and roast in the oven for 15-20 minutes, or until they are tender and slightly caramelized.
  • Once the cod and vegetables are done, remove them from the oven. Sprinkle the vegetables with 2 tbsp chopped basil, 1 tbsp lemon juice, and 2 tbsp grated Parmesan cheese.
