Ingredients
- 4 cod fillets (6 oz each)
- 1/2 cup breadcrumbs
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh dill
- 1 tbsp chopped fresh chives
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 lb mixed vegetables (such as bell peppers, zucchini, and cherry tomatoes)
- 1 tbsp balsamic vinegar
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1/4 tsp red pepper flakes
- 2 tbsp chopped fresh basil
- 1 tbsp lemon juice
- 2 tbsp grated Parmesan cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine 1/2 cup breadcrumbs, 2 tbsp chopped parsley, 1 tbsp chopped dill, 1 tbsp chopped chives, 2 cloves minced garlic, 1/4 cup grated Parmesan cheese, and salt and pepper to taste.
- Brush the cod fillets with 2 tbsp of olive oil, then press the herbed breadcrumb mixture onto the top of each fillet.
- Place the cod fillets on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until the fish is cooked through and the crust is golden brown.
- While the cod is baking, prepare the roasted vegetables. Toss 1 lb of mixed vegetables with 1 tbsp balsamic vinegar, 1 tsp Italian seasoning, 1/2 tsp garlic powder, 1/4 tsp red pepper flakes, and salt and pepper to taste.
- Spread the vegetables on a separate baking sheet and roast in the oven for 15-20 minutes, or until they are tender and slightly caramelized.
- Once the cod and vegetables are done, remove them from the oven. Sprinkle the vegetables with 2 tbsp chopped basil, 1 tbsp lemon juice, and 2 tbsp grated Parmesan cheese.
