Ingredients
- 1 lb boneless, skinless chicken breast, diced
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/4 cup green onions, chopped
- 1/4 cup red bell pepper, diced
- 2 cloves garlic, minced
- 1 egg, beaten
- 1/2 cup milk
- 2 tbsp jerk seasoning
- 1/2 tsp salt
- 1/4 tsp black pepper
- Vegetable oil for frying
Instructions
- In a large bowl, combine the diced chicken, green onions, red bell pepper, garlic, jerk seasoning, salt, and black pepper.
- In a separate bowl, mix the flour and cornmeal together.
- In another bowl, whisk together the beaten egg and milk.
- Pour the egg and milk mixture over the chicken mixture and stir to combine.
- Gradually add the flour and cornmeal mixture to the chicken mixture, stirring until well combined and the chicken is evenly coated.
- In a large skillet, heat about 1 inch of vegetable oil over medium-high heat.
- Drop spoonfuls of the chicken mixture into the hot oil and fry until golden brown and cooked through, about 3-4 minutes per side.
- Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.
