Instructions

  • In a large bowl, combine the diced chicken, green onions, red bell pepper, garlic, jerk seasoning, salt, and black pepper.
  • In a separate bowl, mix the flour and cornmeal together.
  • In another bowl, whisk together the beaten egg and milk.
  • Pour the egg and milk mixture over the chicken mixture and stir to combine.
  • Gradually add the flour and cornmeal mixture to the chicken mixture, stirring until well combined and the chicken is evenly coated.
  • In a large skillet, heat about 1 inch of vegetable oil over medium-high heat.
  • Drop spoonfuls of the chicken mixture into the hot oil and fry until golden brown and cooked through, about 3-4 minutes per side.
  • Remove the fritters from the oil and place them on a paper towel-lined plate to drain any excess oil.
