  • 1 lb boneless, skinless chicken breast, diced
  • 1 cup all-purpose flour
  • 1/2 cup cornmeal
  • 1/2 cup milk
  • 1 egg
  • 1/2 cup diced onion
  • 1/4 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/4 cup vegetable oil for frying
  • For the mango salsa:
  • 2 ripe mangoes, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeno pepper, seeded and minced
  • 2 tbsp lime juice
  • Salt to taste

  • 1 jalapeno pepper, seeded and minced
  • 2 tbsp lime juice
  • Salt to taste

Instructions

  • In a large bowl, combine the diced chicken, flour, cornmeal, milk, egg, diced onion, diced bell pepper, minced garlic, salt, black pepper, and paprika. Mix until well combined.
  • Heat the vegetable oil in a large skillet over medium heat.
  • Scoop about 1/4 cup of the chicken mixture and carefully drop it into the hot oil. Flatten slightly with a spatula. Cook for 3-4 minutes on each side, or until golden brown and cooked through. Repeat with the remaining chicken mixture, working in batches if necessary. Remove fritters from the skillet and place on a paper towel-lined plate to drain excess oil.
  • In a medium bowl, combine the diced mangoes, red onion, cilantro, jalapeno, and lime juice. Season with salt to taste and stir to combine. Refrigerate until ready to serve.
  • Serve the Bahamian chicken fritters with the tangy mango salsa on the side. Enjoy!
