Ingredients
- 1 lb boneless, skinless chicken breast, diced
- 1 cup all-purpose flour
- 1/2 cup cornmeal
- 1/2 cup milk
- 1 egg
- 1/2 cup diced onion
- 1/4 cup diced bell pepper
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/4 cup vegetable oil for frying
- For the mango salsa:
- 2 ripe mangoes, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- 1 jalapeno pepper, seeded and minced
- 2 tbsp lime juice
- Salt to taste
Instructions
- In a large bowl, combine the diced chicken, flour, cornmeal, milk, egg, diced onion, diced bell pepper, minced garlic, salt, black pepper, and paprika. Mix until well combined.
- Heat the vegetable oil in a large skillet over medium heat.
- Scoop about 1/4 cup of the chicken mixture and carefully drop it into the hot oil. Flatten slightly with a spatula. Cook for 3-4 minutes on each side, or until golden brown and cooked through. Repeat with the remaining chicken mixture, working in batches if necessary. Remove fritters from the skillet and place on a paper towel-lined plate to drain excess oil.
- In a medium bowl, combine the diced mangoes, red onion, cilantro, jalapeno, and lime juice. Season with salt to taste and stir to combine. Refrigerate until ready to serve.
