Ingredients
- 2 cups of lima beans
- 1 cup of fresh dill, chopped
- 4 eggs
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1/4 cup of vegetable oil
- 1 teaspoon of turmeric
- Salt and pepper to taste
Instructions
- In a large pot, bring 4 cups of water to a boil. Add 2 cups of lima beans and cook for 20 minutes or until tender. Drain and set aside.
- In a separate pan, heat 1/4 cup of vegetable oil over medium heat. Add 1 finely chopped onion and sauté until golden brown.
- Add 3 cloves of minced garlic and 1 teaspoon of turmeric to the pan. Cook for 2 minutes, stirring constantly.
- Add the cooked lima beans and 1 cup of chopped fresh dill to the pan. Season with salt and pepper to taste. Cook for an additional 5 minutes, stirring occasionally.
- Create 4 wells in the bean mixture and crack 4 eggs into the wells. Cover the pan and cook for 5-7 minutes, or until the eggs are set to your liking.
- Serve the Baghali Ghatogh hot with rice or bread. Enjoy!
