Instructions

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine 2 lbs of ground beef, 1 cup of bread crumbs, 1/2 cup of diced onion, 1/2 cup of diced green bell pepper, 2 cloves of minced garlic, 2 eggs, 1/4 cup of ketchup, 1/4 cup of BBQ sauce, 1 tsp of Worcestershire sauce, 1 tsp of salt, 1/2 tsp of black pepper, and 1/2 tsp of paprika. Mix until well combined.
  • Shape the meat mixture into a loaf and place it on a baking sheet lined with parchment paper.
  • Lay the 8 slices of bacon over the meatloaf, tucking the ends underneath the loaf.
  • Bake in the preheated oven for 45 minutes.
  • Remove the meatloaf from the oven and brush the top and sides with additional BBQ sauce.
  • Return the meatloaf to the oven and bake for an additional 15 minutes, or until the bacon is crispy and the internal temperature reaches 160°F (71°C).
  • Allow the meatloaf to rest for 10 minutes before slicing and serving. Enjoy!
